More on the coconut oil

The bread I made yesterday with coconut oil tastes great-- though I can't tell any difference between it and olive oil. But, it sure wasn't any worse! Precious still loves it :). I also made tortillas last night with c.o., and though I could taste it, it was not bad.

Last night, I also used the c.o. to make salsa chicken. I sauteed the chicken breasts in about 2 T c.o. until they were browned, then covered them with Emeril's medium salsa (nice kick!) and sprinkled some thyme. The chicken finished cooking while the salsa reduced (about 15 minutes), and the result was WHOA-yummy. I was surprised to find that the coconut oil added a really nice flavor to the dish.
