Texas Wheat Cake

Yesterday, I baked a Texas Wheat Cake for New Daddy's potluck at work today. It was a resounding success, and he brought me home only a piece and a half. Everyone raved about it, and they really raved when New Daddy told them it was made with whole wheat. He didn't bother to tell them about the freshly ground stuff being nutritionally superior, etc., or that it was also made with organic sugar and the glaze with organic powdered sugar. Heh. Obviously the proof is in the eating thereof.

Texas Wheat Cake

1 c butter (2 sticks), softened
2 c sugar
4 eggs
1 Tbsp lemon or orange extract
1/2 tsp vanilla extract
1 Tbsp vinegar
3/4 c buttermilk
2 1/2 c whole wheat flour (about 1 3/4 c soft white berries)
1 tsp baking soda
1/2 tsp salt

Glaze (my version, not the website's):
1 c powdered sugar
5 tsp lemon or orange juice

Beat butter, sugar and eggs together. Add in extracts. Beat in vinegar and buttermilk. Mix dry ingredients together in a separate, larger bowl. Make a well and add in liquid ingredients. Grease and flour a bundt pan and bake at 325 degrees for an hour. Let the cake set in the pan for 5 minutes after baking.

Mix the glaze while the cake bakes, and pour over the cake after placing it on the serving plate.
