I made this for the Valentines homeschool get-together, and it was super-yummy! From Eat Fat, Lose Fat by Enig and Fallon. Because it mixes up in the food processor, it was the perfect coup for a gal with no stove!
2 c crispy almonds
1 c coconut oil, softened
1 c raw honey
1 c carob powder or cocoa powder
2 tsp chocolate extract (if using carob powder)
1 tsp pure vanilla extract
1/2 tsp sea salt
Place all ingredients in a food processor and process until well blended. Line a large loaf pan with parchment paper and spread mixture about 1/2 inch thick. Wrap up in parchment paper and refrigerate several hours. Cut into small squares and store in an airtight container in the refrigerator.

If you don't want to go to the trouble, just use regular almonds :). Though, the flavor is much more "almond-y" when you go through the soaking process; and crispy pecans are out of this world!
